BBQ Lasagna~
1 1/2 lbs. ground beef, cooked and drained. set aside.
6 cooked lasagna noodles
2 cups shredded colby jack cheese
16 oz. small curd cottage cheese
1 egg
In a saucepan combine the following sauce ingredients:
1 cup ketchup
1 chopped green pepper
1 med. onion, finely chopped
1/2 cup packed light brown sugar
1/4 cup lemon juice
2 Tbls. cider vinegar
2 Tbls. Worchestershire sauce
1 Tbls. prepared mustard
1 garlic clove, minced
1 tsp. salt
1/2 tsp. pepper
1/8 tsp. chili powder
bring to boil all sauce ingredients , reduce heat, simmer for 10 minutes uncovered. Spray a 9x11 pan with Pam. Spread half the BBQ sauce in bottom, layer 3 noodles, then half the meat. Repeat sauce, 3 more noodles, meat. sprinkle on about 1 cup of the cheese. Combine the egg and cottage cheese next, spoon over the top, sprinkle with remaining cheese. Bake at 350 uncovered for 55-60 minutes. Let stand 5 minutes or so before cutting.

ReplyDeleteWill have to save this one back for when I get adventureous! :) Looks good but I may have trouble getting over the mind picture.... I'm awfully use to my lasagna with grandma's pasta sauce. lol
