
Hi friends! Hope you are all keeping warm. Yesterday I made some homemade bread and let me just tell you, I could NEVER be on those low carb diets, gotta have my bread! A few years ago I got myself a breadmachine and I thought I'd never make bread the "real" way again, but every now and then I get into the mood to knead something......and there just is nothing better than a slice (or 3) of homemade bread with REAL butter and maybe a light topping of raspberry jam!

This recipe is called Amish loaf bread and I will give you the recipe at the end of this post.

Here is the view I have out my kitchen window today, those icicles are HUGE, I don't ever remember any being that long before! We are to get more snow today and tonight! I want to thank all of you who have left me well wishes and prayers for my back problems. I went to get groceries this morning and it was NOT GOOD:( Once the leg pain gets bad, it just keeps getting worse with every step I take, thank goodness I had hubby along to get me back to the truck! I doubt I will be leaving the house again except for maybe a baby shower this weekend that I would hate to miss. My appt. is next thursday with the neurosurgeon and I can't wait, I feel like I would agree to anything he suggests just to get some relief! I hate to go on about this every time I post, but this is a huge thing for me, not just the giving up my job, but also not being able to do anything as I'm normally a very active person! Amish loaf bread~~
2 cups warm water
2/3 cup sugar
2 pkts. yeast, just regular active dry
1 1/2 tsps. salt
1/4 cup vegetable oil
5 1/2 cups all purpose flour
In a large bowl, dissolve sugar in the warm water. Stir in yeast. Allow to proof about 5-10 min. till it looks foamy on top. Mix in salt and oil. Mix in flour...One cup at a time till incorporated. Knead dough on a lightly floured surface till smooth and elastic, 5-10 minutes. If it is sticky, add in a little more flour. Oil another large bowl lightly and place dough inside, turning to coat top as well, cover bowl with a damp towel and let rise till doubled.
Knead lightly then divide in half. shape dough into 2 loaves and place into well greased 9x5 loaf pans. Allow to rise a half an hour. Place pans in oven, turn on oven to 350 and let bake for 30 minutes. Bread is a golden brown color when done ( I always brush the tops of the bread with butter when they are done baking, it softens up the crust a little) Cool before slicing, enjoy!
I love bread too, but I am a terrible bread maker. I admire those who can master the skill. It looks delicious.

ReplyDeleteWow at the icicles! We get a long fat one in the hole where the downspout should be in the gutter. (our dog ripped off the downspout and we haven't attached it back on yet.) The kids are fascinated with icicles, especially the bigguns.
I hope that SOMETHING can be done for you and the pain! Glad hubby was with you at the store.

Very hard to give up a job, very hard to live with pain and the uncertainty of if it can be fixed...of course you should post about this, this is your LIFE and certainly is on interest to those who care about you!!!

I love bread, too! I make all of our bread since we are so far from the store and I never get tired of smelling it bake. I do get tired of making it sometimes, though, LOL!
