Hi everyone! Boy it sure is COLD here in Pa today, Brrrr! Went early this morning for my MRI and my teeth were chattering! Also the roads were slick and had some icy patches...YUK! Guess it's just a taste of what's to come:( So one of the few things I'm able to do right now is SIT...so I sat and made another batch of lovely cookies last evening. This was the first time I've made these and they kind of resemble a snickerdoodle ( the cookie...not my bunny, lol) but a bit more cinnamon-y. As I was munching away on them, I couldn't help but wonder what some mini choc. chips in the dough would be like, I think it would be yummy, so next time I might try it! If you would like to try these, the recipe is below. Something worth reading this time of year over at
abbyk9.blogspot.com a post entitled 'The Christmas puppy", this kind of thing really gets me fired up!!!

Heavenly Holiday cookie balls~~
2 1/2 cups all purpose flour
2 tsp. baking powder
1 tsp ground cinnamon
1/4 tsp. nutmeg
3/4 cup softened, unsalted butter
3/4 cup sugar
2 eggs
1 tsp. vanilla
Combine flour, baking powder, 1 tsp. cinnamon and nutmeg in med. bowl.
In a large bowl, combine butter, and sugar, beat at med. speed till creamy. Add eggs and vanilla beat well. Reduce mixer speed to low and add flour mix. beat till well combined...1-2 minutes.
Cover dough and refrigerate about 3 hours or till firm.
Heat oven to 375. Combine 1/2 cup sugar and 1/2 tsp. cinnamon in small bowl.
Shape rounded teaspoons of dough into 1" balls, roll in sugar mix to coat. place 2" apart on baking sheets and bake for 9-11 minutes till set. cool on wire racks. If you desire you can roll in the sugar & cinnamon again while still warm.
Snickerdoodles are on my to-do list still. I think I'll try these though instead of using my usual recipe. It's cold here too but no rain snow or sleet so the roads are good to go.
ReplyDeleteHope you get an answer from your MRI soon.
Yum I love cinnamon and this sounds like a wonderful recipe to try! I just made salmon patties for Buster today..trying to get him his Omega 3 oils! Boy he ate them up fast!! Hope your MRI went okay..they are surely to get some results with that scan!
